Meat is a valuable food and is an important source of protein, vitamins and iron. Moreover, these are the essential components for human health. However, its transformation and preservation, by physical and chemical methods, have the potential to trigger the formation of mutagenic, genotoxic and carcinogenic substances.

Several epidemiological studies have shown that there is a link between the immoderate consumption of meat, especially in processed form, and the appearance of several types of cancer. In October 2015, the International Agency for Research on Cancer (IARC) was classified the consumption of red meat as probably carcinogenic to humans (Group 2A), and meat processed as a carcinogen to humans (Group 1) .

In Algeria, the low production and high prices of red meats lead a large majority of consumers to move towards the consumption of cheaper meat products, which is a risk for human health. For this purpose we have evaluated the mutagenic and genotoxic potential of some meat products manufactured in Algeria.

اللحم غذاء ثمين وهو مصدر مهم للبروتين والفيتامينات والحديد. علاوة على ذلك ، هذه هي المكونات الأساسية لصحة الإنسان. ومع ذلك ، فإن تحوله وحفظه ، بالطرق الفيزيائية والكيميائية ، لهما القدرة على تحفيز تكوين المواد المسببة للطفرات والسامة للجينات والمواد المسببة للسرطان.

أظهرت العديد من الدراسات الوبائية أن هناك صلة بين الاستهلاك غير المنتظم للحوم ، وخاصة في شكله المعالج ، وظهور أنواع عديدة من السرطان. في أكتوبر 2015 ، صنفت الوكالة الدولية لبحوث السرطان (IARC) استهلاك اللحوم الحمراء على أنها مسببة للسرطان بالنسبة للبشر (المجموعة 2A) ، واللحوم المصنعة كمسرطن للبشر (المجموعة 1).

في الجزائر ، يؤدي انخفاض إنتاج اللحوم الحمراء وارتفاع أسعارها إلى دفع الغالبية العظمى من المستهلكين نحو استهلاك منتجات اللحوم الرخيصة ، والتي تشكل خطراً على صحة الإنسان. لهذا الغرض قمنا بتقييم الإمكانية المسببة للطفرات والسمية الجينية لبعض منتجات اللحوم المصنعة في الجزائر.

La viande est un aliment de valeur, elle constitue une importante source de protéines, de vitamines et de fer. D’ailleurs, ce sont les composants essentiels pour la santé de l’homme . Cependant sa transformation et sa conservation, par des méthodes physiques et chimiques, ont le potentiel de déclencher la formation des substances mutagènes, génotoxiques et cancérigènes .

Plusieurs études épidémiologiques ont démontré qu’il existe des liens entre la consommation immodérée de viandes, en particulier sous forme transformées et l’apparition de plusieurs types de cancers. En Octobre 2015, Le Centre international de Recherche sur le Cancer (CIRC) a été classé la consommation de la viande rouge comme probablement cancérogène pour l'homme (Groupe 2A), et la viande transformée comme cancérogène pour l’homme (Groupe 1).

En Algérie, la faible production et les prix élevés des viandes rouges conduisent une grande majorité des consommateurs à s'orienter vers la consommation des produits carnés vendus moins chers ce qui constitue donc un risque pour la santé humaine . A cet effet nous avons évalué le pouvoir mutagénique et génotoxique de quelques produits carnés fabriqués en Algérie.
