Abstract

Abstract: 

The study of allergenic proteins and their characterization allows a better understanding of their physicochemical properties. The work on this theme opens up new perspectives in the field of applied biochemistry, nutrition, health and the food industry. The objective of this work is the extraction of the different allergenic proteins from foods frequently consumed in the region. The extracted proteins will go through biochemical characterization by molecular weight determination followed by sequencing to determine the amino acid sequence that makes up these allergens.

دراسة البروتينات المسببة للحساسية وتوصيفها تسمح بفهم أفضل لخصائصهما الفيزيائية والكيميائية. يفتح العمل في هذا الموضوع آفاقًا جديدة في مجال الكيمياء الحيوية التطبيقية والتغذية والصحة وصناعة الأغذية. الهدف من هذا العمل هو استخراج البروتينات المثيرة للحساسية المختلفة من الأطعمة التي يستهلكها كثيرًا في المنطقة. سوف تمر البروتينات المستخرجة من خلال التوصيف الكيميائي الحيوي عن طريق تحديد الوزن الجزيئي تليها التسلسل لتحديد تسلسل الأحماض الأمينية التي تشكل هذه المواد المثيرة للحساسية.

L’étude des protéines allergènes et leur caractérisation permet une meilleur compréhension de leurs propriétés physico-chimiques. Le travail sur cette thématique ouvre de nouvelles perspectives dans le domaine de la biochimie appliquée, la nutrition, la santé et l’industrie alimentaire. L’objectif de ce travail est l’extraction des différentes protéines allergènes des aliments fréquemment consommés dans la région. Les protéines extraites vont passer par une caractérisation biochimique par détermination le poids moléculaire ensuite un séquençage afin de déterminer la séquence en acides aminés qui compose ces allergènes.
